I love coconut. I also love pie. BEST. PIE. EVER. I like dolloping whipped cream on instead of piping it, because then it looks creamier that way.
I remember several years ago making coconut cream pie with my mom. It was fun, but at that time, super hard. Now, it’s easy, since I have more experience with creams and custards.
Ingredients
1 cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
3 cups milk
4 egg yolks
3 tablespoons butter
1 ½ teaspoons vanilla extract
1 cup flaked coconut
1 (9 inch) pie shell, baked
Directions
Step 1 In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat.
Step 2 Place a strainer over a clean mixing bowl; set aside.
Step 3 Beat the egg yolks slightly. Gradually pour 1 cup of the hot custard mixture into yolks, whisking constantly. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat. Immediately pour custard through the strainer.
Step 4 Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool and refrigerate until set, about 4 hours.
We have chickens, and we just bought an incubator to hatch chicks! 6 of 9 have already hatched, and these are their names: Darth Vader, Pom-Pom, Floor, Dark Red, Unnamed and Unnamed. (comment on what we should name them. They’re white.)

Darth Vader: Asher and I made a deal that if one was sorta black, we could name it Darth Vader. Though Vader has only a couple specks on black and is mostly brown, that’s her name (Haha… A lady Darth Vader.)
Pom-Pom: My idea. SHE’S SO FLUFFY!!!!!!!!!!!! She’s white with a tiny speck of black.
Floor: My brother Henry (now his name is Spike. He likes changing names) loves the name Floor when he’s playing games. I’m Miss Pigeon and he’s Floor. So we needed to name a chick Floor. Floor is brown with a whiter head.
Dark Red: Whenever Isabel would play a game, and she was the crook, her name would be Dark Red. I think it’s a dumb name, but comment if you like it. Red is the brownest.
Unnamed and Unnamed: We just haven’t named them. Comment your ideas. They’re both white.

I’ve got MANY comments about wanting another drawing contest, though last time, NOBODY joined. (By the way, I mean sketching, not drawing as in picking one name out of several) So it’s pretty much the same as last time, EXCEPT this time, a green ribbon will be awarded plus 1000 points as a grand prize. There are three rounds to this contest. First, is the breeds to draw:
Quarter Horse (in gallop, canter, or trot gait)
Appaloosa (with spots)
Mustang (running)
Shetland Pony
Clydesdale
Next, you’ll be drawing any breed doing the following gaits WITH a rider:
Walk
Trot
Canter
Gallop
Lastly, you will be doing the following scenes:
A horse in a stall being fed hay
A herd of wild horses, running or drinking
Two horses causing chaos on a farm

THE PONY-POINT BATTLE
Between Indira and Kaia
But on Friday, Kaia got ahead of Indira in the race to get the most points. I didn’t think it could be done, but Kaia posted nearly 50 comments on that single day. She went from about 200 points to 700. At the moment, Kaia is sitting at 780 and her first pony, Sugar Cubes, is healthy. Indi has had her horse Snow for several months and has exactly 782 points and an English saddle. Since both champions have a horse, I thought it would be fun to have a super-hard horse quiz that these winners will have to take to speed ahead with 500 more points and a red ribbon, which is required for several future contests.
